Scientist turned gluten-free bakery owner; trying to find, eat & make the best gluten & dairy-free. NOTE: Generally I eat a clean-"er", low-"er" carb, high-"er" protein paleo diet, but do occasionally throw in not-so-clean (but srtill gf/df) things, try trending recipes, or new grocery store products we've recently found. So you'll find a whole range of things here... I have been on my own health journey since I was diagnosed with FMS (Fibromyalgia) years and years ago. I started by going gluten-free (after being told it would not help!?!), then dairy-free, then fully grain-free/refined-sugar-free/paleo to eventually find relief. I have tried "all the things" and am still on a healing journey, though my flares are much much rarer these days. In 2020 I got back to my love of baking, started baking gf/df/paleo items for our local weekend farmer's market, and ended up leaving my full time career to open my very own gf/df/paleo bakery.
